My sister has a lovely recipe for fermented applesauce on her blog Whole Foods on a Budget that you can read HERE. She has both a cooked and a raw fermented version. Today I made the raw version and it is quick and easy! To help the fermenting process along you will need whey, which you can get from store bought yogurt or you can purchase a yogurt culture and obtain your whey from homemade yogurt. Cultures can be bought from Cultures for Health. Just click on the link to the right. They have a number of wonderful yogurts you can make at home, many of them heirlooms. I have tried two of their yogurt cultures so far and love them!!
Here is my applesauce, ready to ferment! I'm taking advantage of this warm spell we are having in SoCal and putting up a bunch of fermented foods. Yum!

ReplyDeleteInteresting. I love the idea of fermented foods--they are so good for your gut. I make homemade yogurt using organic yogurt as a starter. I'm going to try this applesauce!
I've never heard of this. How does the taste compare to regular apple sauce?
ReplyDeleteThis will have a little bit of a tang to it from the salt and the fermentation process, but is very yummy! It will have much more nutritional value than just regular applesauce, one, because it is not cooked, and two, because it is fermented.

I'm a newbie to fermentation. Sometimes I make something and then I just let it sit in my fridge (like the fermented beets in there right now!) because I'm too nervous to actually eat it. Sad, I know. I have to move past this phase.... Thanks for the post!
ReplyDeleteI am new to the fermenting thing too. I'll go and check out your sisters blog for directions. I know I need to eat fermented foods I just have to find a way of including it that doesn't require a lot of work. This might just do the trick!
